3 eggs
1 cup oil
1½ cup brown sugar
1½ cup all-purpose flour
1 tsp baking soda
2 tsp baking powder
2 tsp cinnamon
½ tsp salt
½ cup chopped walnuts
½ cup crushed pineapple
½ cup raisins
1 cup shredded carrots
Preheat oven to 350°.
Whisk together eggs, oil, and sugar. Stir in dry ingredients and mix well. Add remaining ingredients.
Grease and flour 9" or mini loaf pans. Fill pans ⅔ full.
Bake at 350° for 40 minutes.
