Pie Crust

2 cups plain flour
½ cup vegetable oil
⅓ cup cold water
1 egg white, lightly beaten

Preheat oven to 350°.

Stir flour and oil until mixed well.  Gradually add water; do not overwork mixture.

Roll out dough on waxed paper to roughly a 10" circle.  Carefully pick up wax paper and flip dough upside down onto pie plate, then peel off waxed paper after dough has been pressed into place.  Trim edges cleanly with a knife.

Brush bottom of crust with egg white.

Bake at 350° for 10 minutes.  Allow to cool and set slightly before adding filling.

Makes 2 crusts.
