Large ham
4-5 cloves garlic
Marinade:
2 bottles mojo mix
6 lemons
5 bay leaves
1 tbsp oregano
½ tsp cumin
Olive oil
Salt and pepper
Score skin of ham in triangles. Stuff cloves of garlic under skin. Insert ham in cooking bag and place thick skin side down in large roasting pan. Add marinade and let sit for 3 days in the refrigerator, massaging twice a day.
Heat oven to 350°. Poke holes in top of cooking bag and bake 3-4 hours at 350° until internal temperature reaches 165-170°. Let cool and pick out fat and bay leaves. Shred by hand with two forks and pour juice over meat before serving warm.
