1 lb chicken
Salt and pepper
½ cup honey
¼ cup soy sauce
2 tbsp chopped onion
2 tbsp ketchup
1 tbsp olive or vegetable oil
1 clove garlic (minced)
¼ tsp red pepper flakes
Season both sides of chicken with salt and pepper; put in crock pot. In a small bowl, combine remaining ingredients. Pour over chicken and cover.
Cook on low for 3 hours or on high for 1½ hours. Cut chicken into bite-size pieces and toss with sauce. Serve over cooked rice or asian noodles.
Alternative preparation:
Preheat oven to 350°. Dice chicken and season with salt and pepper. Place in 8x8" casserole dish and pour sauce over top. Bake at 350° for 20 minutes, stirring halfway through. Serve over cooked rice or asian noodles.
