3 eggs
1 c vegetable oil
2 ¼ c sugar
3 tsp vanilla extract
2 c grated zucchini
3 c all-purpose flour
3 tsp ground cinnamon
1 tsp salt
1 tsp baking soda
1 tsp baking powder
Preheat oven to 325°.
Mix eggs, oil, sugar, and vanilla. Add flour, cinnamon, salt, baking powder, and baking soda.
Add shredded zucchini and combine.
Spray two 4x8" loaf pans with cooking spray. Pour mixture into pans, no higher than ⅔ full.
Bake at 325° for 45-55 minutes.
