8 frozen boneless, skinless chicken breast
2 tbsp Italian seasoning
1 tbsp dried basil
2 cloves garlic, minced
1 large onion, chopped
2 (14 oz) cans coconut milk (full fat); shake before opening
2 (14 oz) can diced tomatoes
2 cups chicken broth
1 small can tomato paste
½ jar tomato sauce
Salt and pepper to taste
Combine all ingredients into the crock pot and cook on Low for 9 hours. Remove and shred chicken with two forks, then return to crock pot and serve.
