¾ cup finely chopped carrots
1 medium onion, finely chopped
3 cups chicken broth
½ tsp salt
1 cup whole milk
¼ tsp black pepper
2 cups shredded Cheddar cheese
Place potatoes, carrots, onion, broth and salt in crock pot. Cover and cook on Low for 6-7 hours.
Stir in milk and pepper. Cover and cook on High for 15 minutes. Stir in cheese and stir until melted.
