Meatloaf

3 lbs lean ground chuck (can substitute 1 lb ground pork)
1 egg, beaten
1 pkg dry onion soup mix
¾ cup dry breadcrumbs
Ketchup (optional)

Preheat oven to 350°.

Mix all ingredients; add a splash of milk if too dry.  Shape into smooth loaf.  Top with ketchup if not using gravy (below).

Bake at 350° for 60 minutes.

Gravy:
Pour pan drippings into a saucepan on medium-high heat and add 2 tbsp flour or corn starch to thicken.  Pour over top of meatloaf slices before serving.
