4 large tomatoes
4 oz crumbled feta cheese
¼ cup fine bread crumbs
2 tbsp green onions (chopped)
2 tbsp fresh parsley (chopped)
2 tbsp olive oil
Preheat oven to 350°.
Cut tomatoes in half horizontally. Scoop out pulp and discard seeds. Coarsely chop remaining pulp and stir together with remaining ingredients. Spoon mixture back into tomato shells and place in a baking dish.
Bake at 350° for 15 minutes.
