Enchilada Casserole

2-3 lbs ground beef or turkey
2-3 cloves garlic (chopped)

1 onion (chopped)
1 green pepper (chopped)

1 can cream of chicken soup
2 cans (10 oz) enchilada sauce
1 can green chiles (chopped)
2 packets taco seasoning
Tortillas
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese

Optional toppings:
Sour cream
Sliced tomatoes
Shredded lettuce
Salsa


Preheat oven to 375°.

Brown meat and drain grease.  Add chopped onions, pepper and garlic.  Stir in cream of chicken soup, enchilada sauce, green chiles, and taco seasoning.  Let simmer.

Grease casserole dish and layer tortillas, meat mixture, and cheese.  Repeat for 3-4 layers, ending with cheese on top.

Bake at 375° for 30 minutes.
